Satay Noodles

Satay noodles that ooze with the deliciousness and richness of peanut butter is one of those foods often given up in the attempt to lose weight and get healthy. The good news is that we feel your pain. We have lovingly created an equally rich and decadent satay noodle dish but without the added guilt. Ours is tasty and nutritious at the same time. For a savoury umami flavour we add miso paste instead of unnecessary salts. The addition of miso is also helpful for the digestive system to encourage a healthy metabolism. Don’t worry, there is still plenty of peanut butter and taste to get the true satay noodle flavour. We love ours served with the textures of water chestnuts and leafy greens but feel free to choose any other vegetable that makes your heart sing. After all, you can never have too many vegetables.

Ingredients:

270g Buckwheat Soba Noodles

4 Tablespoons crunchy peanut butter, unprocessed and unsalted

1 cup leafy greens (Bok Choy, Choy Sum, Chinese Broccoli, Kale, Spinach)

Handful red chili (or to taste)

2 Tablespoons Miso Paste

1/3 cup room temperature water

3 Tablespoons Living Pure Eucalyptus Honey

1 can Water chestnuts

2 limes

Sesame Seeds

2 Medium sized pickled cucumbers

Living Pure Extra Virgin Olive Oil

Method:

– Cook buckwheat soba noodles according to packet instruction. Once cooked, set aside.

– Over medium heat, place a small pot.

  • Add water, peanut butter, miso paste and Living Pure Eucalyptus Honey.

  • Stir continuously to prevent mixture sticking to bottom.

  • For a smoother and thinner consistency, add more water.

  • Continue stirring until all ingredients are combined.

  • Once satay sauce is well combined and glistening, pour over buckwheat noodles. Mix well to combine. Set aside

  • Over medium heat, braise leafy greens in Living Pure Olive Oil. Once cooked, place on platter or plate for serving.

  • Add chilli and sesame seeds to satay noodles. Stir well.

  • Squeeze juice of 1 lime over noodles. Stir well to combine.

  • TO serve, place generous amount of satay noodles next to braised greens. Top with more chili (to taste), sesame seeds and thinly sliced pickles.

  • We serve our satay noodles with extra lime wedges and water chestnuts for additional crunch.
