Blueberry Pancakes
At Living Pure we love starting our weekend slowly with sweet healthy pancakes that are abundant in colour, freshness and flavour. However, we have created this stunning recipe that is so easy and delicious, you’ll want to eat it during the week too. We start with the highly nutritious buckwheat flour that is rich in good fats. We then combine it with spelt flour – a fibre dense flour for digestive health – banana and Living Pure honey for healthy sweetness to support balanced blood sugar levels and then we top the stunning pancakes with blueberry jam that is so delicious it’s easily mistaken for an indulgence. We love the jam combination of blueberries and figs and the addition of fresh mint for a complete flavour explosion. Go ahead and give them a go…
Blueberries are packed with the antioxidant anthocyanin, that’s what gives blueberries their vibrant blue colour. This powerful nutrient acts a protective shield against diseases inside the body. This blueberry jam is a perfect addition to the pancakes but it is equally delicious on multigrain toast for breakfast or a a dip for crunchy apple and pear sticks for afternoon tea.
Ingredients:
100g Buckwheat Flour
30g Spelt Flour
1 very ripe mashed banana
125grams blueberries
150mL skim milk
50mL Buttermilk
3tsp ground cinnamon
2 Tablespoons Aged Balsamic Vinegar
Living Pure Delicate Extra Virgin Olive Oil
Living Pure Manuka Honey
Method:
Blueberry Jam
In a medium heat pan, add 2 tablespoons water and 100g blueberries. Once the blueberries have softened, remove from heat. Stir through 1 Tablespoon cinnamon and Balsamic Vinegar. Mix well, then set aside.
Blueberry Pancakes
Sift the cinnamon, buckwheat and spelt flours. Then combine in a bowl. Set a side. In a separate bowl, beat the egg, then mix with skim milk and buttermilk. Make a well in the centre of the flours, then slowly pour in the milk and egg mixture, constantly stirring to combine all ingredients. Set aside to settle.
Over a high heat, coat a fry pan with one tablespoon of Living Pure Extra Virgin Olive Oil. Turn the heat down to medium then pour in a ladle of the pancake mixture. Careful not to overcrowd the pan as the pancakes will expand (no more than 4 at a time). On the top side, add a few blueberries, gently push them into the batter. Cook the pancake for a couple minutes on either side, until lightly browned, then remove from heat. Set cooked pancakes aside until all pancakes are cooked.
Serving
To serve, place one pancake on plate. Top with blueberry jam. Stack another pancake over the jam, continue layering until all pancakes and jam have been used. Drizzle a small amount of Living Pure Manuka Honey over the top. Eat and Enjoy
