Lemon and Olive Oil Asparagus
Asparagus is one of the most underrated vegetables. It has a distinct flavour but it is light enough to be paired with various foods such as fish and seafood to a vegetarian fried rice with tofu and tempeh. Asparagus contains a nutrient called phytochemicals which are known to offer antibacterial properties. This is helpful for assisting the immune system to support overall health. This recipe showcases the beauty that accompanies asparagus by keeping things simple and light. We love them with parmesan cheese and lemon but for something more substantial, add a couple of poached eggs and toasted sourdough drizzled with Living Pure Robust Extra Virgin Olive oil for a full meal.

Ingredients
1 big bunch of asparagus
1 squeeze lemon juice
Living Pure Extra Virgin Olive Oil
Sea salt
Freshly ground black pepper
Parmesan cheese
Method
Wash 1 big bunch of asparagus. Cut or snip off woody ends.
Place the asparagus into a pot of boiling water. Blanch the asparagus for 1 minute. Drain the asparagus and arrange them onto plates with a good squeeze of lemon juice and a good drizzle of Living Pure Premium Extra Virgin Olive Oil, season with sea salt and freshly ground black pepper to taste, then sprinkle the Parmesan cheese over the asparagus.
